2 cups | flour | 2 cups | sugar | 1 tsp. | baking soda | 1 tsp. | cinnamon | 1 tsp. | salt | 1 1/4 cups | vegetable oil | 4 | eggs | 3 cups | grated carrots | ICING: | | 1 stick | margarine | 1- 8 oz. pkg. | cream cheese | 1 box | powdered sugar | 1 cup | nuts, chopped | 2 tsp. | vanilla |
| Sift together dry ingredients. Add oil, eggs and carrots. Bake 45 minutes in 350 oven or until toothpick inserted in center is clean. Half recipe makes a loaf cake. Otherwise, can be made as a layer cake. Ice when totally cool. Refrigerate after frosting. |
