3 | eggs | 1 cup | oil | 1 cup | sugar | 1 tsp. | vanilla | 1/2 cup | nuts, chopped | 3 cups | flour | 1 tsp. | baking powder | 1/2 tsp. | baking soda | 1/4 tsp. | salt |
| Beat eggs. Add oil, sugar, vanilla, nuts. Blend in dry ingredients. Form dough into oblong loaves about 2 inches wide.* Place on greased cookie sheet about 1 inch apart. Bake at 350 degrees for about 30 minutes. Slice diagonally while warm and then spread out pieces on cookie sheet. Sprinkle with cinnamon and sugar mixture. Toast for a few minutes until lightly browned; watch to avoid burning. Yields approx. 70 pieces. Store in airtight containers to preserve crispness.
*If the dough is too sticky, more flour can be worked into the dough; also I have refrigerated the dough before forming the loaves. |
