Salmon Patties

1 lb. canpink salmon
2eggs, beaten
1/4 cupmilk
1/2 tsp.salt
pinchPepper
1/2 cupfine saltine cracker crumbs (12 crackers)
diced onion
Drain salmon, reserving liquid to use in place of milk. Beat eggs, add cracker crumbs, onion, salmon, salmon liquid, seasonings. Divide into 4 -6 patties (sort of spoon into hand, shape and drop onto oil). Fry on each side until golden brown and set - about 10 minutes per side.
