| 3 to 4 | large baking potatoes | | 1/4 c. | warm milk | | 2 to 3 T. | butter | | 3 cups | cabbage, cut into 1/2" squares | | 3 | green onions, each 4" long, thinly sliced | | 2 T. | melted butter |
| | Peel potatoes and cut into 3/4" thick slices. Cover with boiling salted water and cook until tender. Drain, then shake potatoes over low heat for several seconds to dry. Mash, add 2 to 3 T. butter & warm milk; beat until fluffy. Meanwhile add enough water to cabbage to barely cover, season with salt. Bring to boil and cook for 7 minutes. Drain off liquid; add 2 T. butter & return to low heat for 2 minutes. Combine potatoes, cabbage & green onion; beat well. Season with salt and pepper. |
