1 | egg | 1/2 cup | milk | 1 cup | Parmesan cheese | 1/2 cup | flour | 1 1/2 t. | paprika | Dash | salt, pepper | 1/4 cup | margarine, melted | 8 medium | skinless, boneless chicken breast halves |
| Beat egg in shallow bowl, whisk in milk. In another shallow bowl, stir together Parmesan cheese, flour, salt, pepper and paprika.
Dip chicken in egg mixture then dip in cheese mixture, coating evenly. Arrange chicken in baking pan so pieces don't touch. Drizzle butter evenly over chicken.
Bake at 350 degrees for 45 minutes or till chicken is tender and no longer pink. Do not turn during baking. (The recipe actually says to cook for 30 minutes but I cook it the extra 15 minutes {or longer if they're thick breasts} just to be sure.)
Can't remember the coach's name, but this was from a Wisconsin football coach's wife in an article a few years back. |
