| 1 cup | oatmeal | | 1 cup | Brown sugar | | 1 cup | flour | | 1/2 cup | margarine | | 1 tsp. | cinnamon | | 4 cups | rhubarb, cut into 1" pieces | | Sauce: | | | 1 cup | sugar | | 2 T. | Cornstarch | | 1 cup | water | | 1 tsp. | vanilla |
| | Mix oatmeal, brown sugar, flour, margarine and cinnamon together and place 2/3 of the mixture in a 9 X 13 pan. Press slightly and put the 4 cups of rhubarb on top of the crumbs.
Combine sauce ingredients (sugar, cornstarch, water) and cook until thick and clear, then add vanilla. Pour over rhubarb. Top with the remaining 1/3 of the crumbs. Bake 1 hour at 350 degrees. |
