Rhubarb Crisp
Ingredients
Instructions
1 cupoatmeal
1 cupBrown sugar
1 cupflour
1/2 cupmargarine
1 tsp.cinnamon
4 cupsrhubarb, cut into 1" pieces
Sauce:
1 cupsugar
2 T.Cornstarch
1 cupwater
1 tsp.vanilla
Mix oatmeal, brown sugar, flour, margarine and cinnamon together and place 2/3 of the mixture in a 9 X 13 pan. Press slightly and put the 4 cups of rhubarb on top of the crumbs. Combine sauce ingredients (sugar, cornstarch, water) and cook until thick and clear, then add vanilla. Pour over rhubarb. Top with the remaining 1/3 of the crumbs. Bake 1 hour at 350 degrees.
