3 cups | rhubarb, cut into 1" pieces | 1 cup | sugar or sugar-free equivalent |
| Wash rhubarb; peel if skin is tough. Cut into 1-inch pieces and put into saucepan. Add sugar and very small amount of hot water. Cover and cook slowly until tender, about 10 minutes. Good as a side dish. When using a sugar substitute, add after cooking. Equal or Splenda work fine. |
